The fresh crisp air of Spring is upon us, which means there is a lot to look forward to in the coming months, including a collaboration between two Pittsburgh staples. Eleventh Hour Brewing fans have become accustomed to a rotating batch of food trucks during operating hours, however starting on Wednesday, April 3rd the brewery and Blue Sparrow food truck will venture into a new relationship. Blue Sparrow’s vintage 1956 Greyhound bus will be parked outside the brewery four out of the five days of operation!
On Wednesday. Thursday, and Friday nights as well as Sundays Pittsburghers can chow down on the eclectic street food cuisine offered by Blue Sparrow while sipping on Eleventh Hours brews.

This partnership will allow them to meld the manydifferent flavor combinations of global street food with special creations from the brewhouse which could include specialty different menu options each day at Eleventh Hour to keep things exciting. Saturdays will continue to provide patrons with a variety of food truck options.
During the build out of Eleventh Hour Brewing, Luke Cypher, owner of Blue Sparrow, asked Matt McMahon, owner and head brewer at Eleventh Hour, if he could park his brand new food truck in the brewery parking lot. Without even knowing each other, they shook hands and agreed, and so began a close partnership and soon to be great friendship.
Over the following 18 months McMahon really got to know Cypher and began to see him as the visionary chef that he strives to be. Because of this, McMahon asked if Cypher would be a regular food truck at the brewery just on Friday nights, which kicked off the perfect partnership.
Over the past 18 months, they grew together as brewer and chef, brewery and food truck. The more they worked together the more evident the next step of the Blue Sparrow/Eleventh Hour collaboration became. The two owners began to see many potential overlaps and benefits to a more permanent spot for Blue Sparrow to serve its menu at Eleventh Hour Brewing. With a fixed partnership, beer pairings and special events will become a regular occurrence allowing each business to shine in new and exciting ways.
