Young and Beautiful from Hollow Earth Brewing Co.

A great little NEIPA brewed with wheat, rye and oat. This beer is dry hopped with 2 lbs/bbl of Cascade and Simcoe. From the pour you’ll notice that this beer creates a decent head, full and white, that sits for quite some time. Just by looking at this beer, you may get the impression that it’ll hit you in the face with citrus, it won’t. This beer only sits at 5.7% ABV, but that doesn’t make this a drink all day type of IPA. The dryness of the beer will make you want to take your time. From the first sip you’ll get hit with some flavors, most notably the hops, but they’re a bit muted, as your quickly consumed by the dry aftertaste. Where this beer really shines is the aroma. It’s hard for me to pinpoint this enthralling scent. The best analogy I can give is that it creates a floral honey smell. It’s a very sweet fragrance, but again sort of muted, which fits perfectly for this beer. This beer sits great, it smells great, it even tastes great. This a great beer that would pair very well with a vegetarian dish, I’m thinking something portabella heavy. This beer will also leave you wanting more, just like everything young and beautiful. If you like this but found it a bit too dry, try out Goose Islands IPA. If you love this but are stuck on IPA’s try venturing into saisons, but not before you head to Hollow Earth Brewing and pick up a growler of their sweet aroma heavy Young and Beautiful.
