Mellow Monks is a Belgian-style ale with 4.5% ABV from Weyerbacher Brewing Co. and is available as a seasonal beginning in August. ‘Mellow’ is a tamed down version of the Merry Monks Belgian-style Tripel which boasts a much higher ABV, but some similar flavor notes.
This ale pours to a mostly clear straw color that produces a thin white head that quickly dissolves leaving an aroma of clove and biscuit. Its mild scent continues into first sips with a gentle fruit forward flavor, particularly apple and banana with some bready wheat notes below the surface. Finishing dry there is a hint of spice on the back end, but it is very minor, this should not be thought of as a spiced ale.
Brewed to be a session, Weyerbacher accomplishes this masterfully with a subtly flavored, lightly hopped, pleasant smelling ale that anyone who loves beers can appreciate. Its dry finish and low carbonation combine to make for easy drinking where splitting a six-pack with your best brew bud will not be hard.
